Add all of the ingredients to a slow cooker and stir to coat.
Cover and cook the pork on medium until fork tender, 4-5 hours
Remove the pork from the juices and shred with 2 forks
Transfer the ingredients remaining in the slow cooker to a pot on the stovetop (or use the sear setting on your appliance to continue cooking the sauce).
Cook the sauce over medium-high heat until it has reduced by half. Pour the caramelized pineapple sauce over the shredded pork and serve with warm corn tortillas and the toppings of your choice
